Coffee Crumb Cake

Cake Ingredients:

2 cups flour
1 1/4 cup sugar
2 tsp baking powder
2 tsp instant coffee
1 tsp vanilla extract
1/2 cup oil OR margarine
1/2 cup soy milk
1/2 cup water
2 eggs

Crumb Ingredients:

1/4 cup flour
2 Tbsp brown sugar
2 Tbsp margarine

Frosting Ingredients:

2 Tbsp margarine
1 1/2 cups confectioners sugar
1 tsp instant coffee powder/granules
1/2 tsp vanilla extract
2-3 Tbsp soy milk


Mix all cake ingredients.
Pour mixture in a 9X13 pan or a bundt pan.
Bake at 180 c / 350 f for 30-35 minutes.

Mix all crumb ingredients in a bowl.
Spread evenly on a baking sheet.
Bake crumbs at 180 c / 350 f for 12 minutes.
Cool, then crumble.

In a separate bowl, mix frosting ingredients.
When the cake is cooled, cover with frosting.
Sprinkle the crumbs all over the cake.
Leave to set for an hour before serving or covering.
