About the Parsha
In Ekev Moshe (Moses) tells Bnei Yisrael (the People of Israel) about the wonders of the land they are about to enter. Among many other thing, the Land of Israel has the seven species: wheat, barley, grapes, figs, pomegranates, (oil from) olives and (honey of) dates.
About the Dessert
These cookies represent the seven species.
Make sugar cookies according to the recipe here.
Roll out the dough, and cut out medium-sized circles (I used a fluted-shaped cookie cutter).
Bake the cookies according to the instructions in the recipe.
When cooled, frost the cookies using royal icing (recipe here).
Divide some of the white icing into cups or bowls, and use a drop of gel food coloring to make each color: red, yellow, green, purple, grey and black icing.
Pour each icing into a piping bag or a baggie. Snip off a tiny corner of each bag.
Pipe the design of each of the seven species: wheat, barley, grapes, figs, pomegranates, olives, and dates.
